If you're looking for a healthy, whole-wheat bread (one without high-fructose corn syrup and unpronounceable preservatives), you can either find a bakery you trust, or just make it yourself.

It turns out most bread takes a lot of time: mixing, kneading, rising, waiting, baking, and so on. If you don't have that time, then get a bread machine, which will do most of the work for you. Put in the ingredients, push a few buttons, and out comes bread.

This recipe creates a soft, seeded sandwich-bread. And since the baking is done by a robot, it's pretty simple.




  • White sesame seeds (2 tablespoons)
  • Black sesame seeds (2 tablespoons)
  • Sunflower seeds (2 tablespoons)
  • Chia seeds (1 tablespoon)

Dry ingredients

  • Yeast (2 ½ teaspoons)
  • Salt (1 ¾ teaspoons)
  • Gluten (2 tablespoons)
  • Whole-wheat flour (3 ½ cups)

Wet ingredients

  • Filtered water (1/3 cup)
  • Honey (2 tablespoons)
  • Sesame oil (2 tablespoons)
  • Toasted sesame oil (1 tablespoon)
  • Tahini (1 tablespoon)

1.  Toast the seeds

First, toast the seeds:

  1. Preheat the oven to 350° F.
  2. In a baking pan, mix the:
    •  White sesame seeds (2 tablespoons)
    •  Black sesame seeds (2 tablespoons)
    •  Sunflower seeds (2 tablespoons)
  3. Once the oven is preheated, bake the seeds for 10 minutes.

2.  Activate the yeast

While the seeds are toasting, activate the yeast:

  1. In a microwave, heat the water(1/3 cup) to about 105° F, which probably takes about 30 seconds. If you put your finger in the water, it should feel a little warm. Careful not to heat the water too hot (130° F) or the yeast will die.
  2. In the bread machine's pan, mix the:
    •  Heated water (1/3 cup)
    •  Yeast (2 ½ teaspoons)
    •  Toasted sesame oil (1 tablespoon)
    •  Sesame oil (2 tablespoons)
    •  Honey (2 tablespoons)
    •  Tahini (1 tablespoon)
  3. Let this sit for about 5 minutes. You'll start to see some action in the water as the yeast activates and bubbles to the top.

3.  Mix the dry ingredients

While the yeast is activating and the seeds are toasting, mix the dry ingredients:

  1. In a small mixing bowl, combine:
  • Salt (1 ¾ teaspoons)
  • Gluten (2 tablespoons)
  • Whole-wheat flour (3 ½ cups)
  • Chia seeds (1 tablespoon)

4.  Combine the components

Once the seeds are toasted and the yeast is activated, combine the components:

  • Put the dry ingredients on top of the liquid, and then put the toasted seeds on top of the dry ingredients.

Note   Don't mix! The bread maker will do that on it's own during the proper cycle. Also, the toasted seeds are probably too hot to mix with the yeast, which is why you put them on top of the dry ingredients.

5.  Mix & bake the bread

Now, start your bread machine:

  1. Set your bread machine to: Whole Wheat, 1.5 lb Loaf, and Medium crust.
  2. The first cycle is probably a rest cycle, where the yeast continues to activate. After the bread machine starts to mix, give it hand. With a spatula, scrape the sides of the pan that the bread machine missed.
  3. Once the bread is done baking, take it out of the pan and let it cool on a cooling rack.
